Creole Stuffed Bell Pepper at Copeland’s
It’s smart to watch your waistline, but that doesn’t mean you have to give up those visits to your favorite restaurant. If you’re watching your calories, salt or sugar, ask your waiter if you can make substitutions or find healthier items on the menu. More and more eateries are offering light menus with delicious choices that include steamed vegetables, lean meats that are baked or broiled rather than fried, and lighter sauces.
Just look at Copeland’s
Manager Rob Irwin says patrons can choose from a “lite” menu of entrees under 550 calories. Try dishes like Turkey Stuffed Portabella, Grilled Sirloin, White Bean Chicken Chili, or the very popular Creole Stuffed Bell Pepper (shown here).
Fresh green bell peppers are stuffed with ground turkey, jasmine rice, spices and Creole trinity, then topped with a tomato sauce and served with corn.
